Simple Everyday Vinaigrette

The magic of simplicity and flavor with my all-time favorite dressing! Here’s the recipe:
Cook time: 5-10 minutes to prepare
Makes about 1 1/2 cups of dressing
1 cup Extra Virgin Olive Oil
1/3 Cup Vinegar (we used organic white wine vinegar, but any vinegar is good here)
juice from 1/2 lemon
1 Tbsp Dijon Mustard
1 shallot, fined chopped
2 cloves garlic, smashed with the side of a knife
Place all ingredients in a mason jar. Place a lid on the jar and vigorously shake for 20-30 seconds until emulsified. Taste and season with salt and pepper.
I keep this in the fridge and pour over salads or use for dipping! Enjoy!
