This is why you often find beets available fresh during the winter, and they are a great choice for seasonal eating. Here’s the recipe!

🍽️ Simply blend:

  • 1 roasted beet, peeled and quartered
  • 1 can organic chickpeas, drained and rinsed
  • 1/2 cup tahini
  • 2 cloves garlic
  • Juice of 1 lemon
  • Salt to taste

until smooth.

Drizzle with olive oil and sprinkle with flaky salt, your favorite seasonings, or herbs for an extra flavor kick. A perfect, heartwarming treat to brighten up chilly days! ❄️🌱
