My go to winter snack.
Beets are in season during the winter months in many regions. They are a hardy vegetable that can withstand cold temperatures, making them an ideal crop for winter harvest. This is why you often find beets available fresh during the winter, and they are a great choice for seasonal eating. Their earthy flavor and nutritional benefits make them a popular ingredient for winter dishes, including soups, roasts, and, as you mentioned, in flavorful preparations like beet hummus.
Here’s the recipe!
🍽️ Simply blend:
- 1 roasted beet, peeled and quartered
- 1 can organic chickpeas, drained and rinsed
- 1/2 cup tahini
- 2 cloves garlic
- Juice of 1 lemon
- Salt to taste
until smooth.
Drizzle with olive oil and sprinkle with flaky salt, your favorite seasonings, or herbs for an extra flavor kick. A perfect, heartwarming treat to brighten up chilly days! ❄️🌱
